How to Make Them
Ingredients:
- 1 tablespoon canola oil
- 4 flour tortillas, divided
- 6 tablespoons of jarred marinara sauce, divided
- 6 ounces of pepper Jack cheese, shredded, divided
- 1/2 cup thinly sliced linguica or Spanish chorizo but pepperoni would also work
- Grated Parmesan cheese, dried oregano, and crushed red pepper, when serving
Instructions:
1. First, preheat the broiler with the oven rack 8 inches away from the heat. Heat a cast-iron griddle over two burners over medium heat; brush with oil.
2. Place 2 of the tortillas in a single layer on the hot griddle. Spread 2 tablespoons of marinara sauce on each tortilla.
3. Then scatter 1/2 cup pepper Jack cheese over the marinara; top this using the 2 remaining tortillas.
4. Cook until crisp and lightly browned for approximately 3 minutes. Flip quesadizzas over. Spread the remaining 2 tablespoons of the marinara sauce evenly over the quesadizza, and sprinkle evenly with the remaining 1/2 cup pepper Jack cheese. Arrange the linguica slices evenly over each quesadizza.
5. Transfer the quesadizzas to a rimmed baking sheet. Broil until the cheese has melted and the linguica has started to slightly curl. This should take about 1 to 2 minutes.
6. Slice quesadizzas into wedges. Then simply serve with some parmesan, oregano, and crushed red pepper.
